Eel Sauce

  • Prep Time: 3 minutes
  • Total Time: 20 minutes plus time to chill
  • Yield: 1/4 cup


  • 1/4 cup soy sauce
  • 1/4 cup mirin
  • 1/4 cup sugar


  • Combine all ingredients in a small saucepan. Cook, stirring occasionally, over medium-low heat until the sauce has reduced by 1/3 and is thick and syrupy, about 5 to 6 minutes.  The sauce can be kept in the refrigerator for up to 3 months.
