Perfect Waffles

Perfect Waffles

  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • 4 large eggs, separated
  • 2 tablespoons sugar
  • 2 cups whole milk
  • 4 tablespoons unsalted butter, melted
  • ½ teaspoon vanilla extract


  • Preheat the waffle maker.

    Sift the flour, baking powder, and salt into a medium bowl.  In a second bowl whisk together the egg yolks and sugar until the sugar is completely dissolved and eggs have turned a pale yellow. Add the milk, melted butter, and vanilla extract to the eggs and whisk to combine.

    Add the flour mixture to the egg-milk mixture and whisk just until blended.  Do not overmix.

    In a third bowl, beat the egg whites with an electric mixer until soft peaks form, about 1 minute.

    Using a rubber spatula, gently fold the egg whites into the waffle batter.  Do not overmix!

    When the green indicator comes on, pour ¾ to 1 cup of the batter onto each grid of the waffle maker. Close, then turn the waffle maker to the other side and let cook for 5 minutes. The waffles should be golden and crisp.  Repeat cooking with remaining batter.   

    Serve immediately with toppings of your choice.
