- 8 rainbow colored carrots, peeled and cut into 1/2-inch oblique cut
- 4 tablespoons butter
- 1/4 cup chicken stock or vegetable broth
- 1 tablespoon lemon juice
- 2 sprigs rosemary
- 2 tablespoons raw honey
- Salt and pepper to taste
Place the carrots, butter, stock, lemon juice and rosemary in the barrel pan of Emeril's Air Fryer set to 320º F for 20 minutes and cook stirring occassionally. Add the honey and continue to cook for 15 minutes longer, stirring every 5 to 7 minutes.
