- 4 large eggs
- 1/2 cup milk or half and half
- 1/3 cup goat cheese
- 1/4 cup chopped mixed soft herbs such as tarragon, chives, parsley
- 1/4 teaspoon salt
- 1/8 teaspoon freshly ground pepper
Grease the barrel pan with a little butter or cooking spray.
In a medium size mixing bowl, whisk together the eggs and milk. Add the goat cheese, herbs and salt and pepper and mix well. Pour the ingredients into the greased barrel pan. Set Emeril's 5.3 quart Air Fryer to 330º F and cook the frittata for 20 to 22 minutes or until the frittata is set and a toothpick inserted into the center comes out clean.
Remove the barrel pan from the basket and allow the frittata to cool for 1 or 2 minutes. Transfer to a platter and serve immediately.
