- 2 pounds broccoli crowns, stemmed and cut into 1-1½-inch florets
- 2 tablespoons olive oil
- 1 teaspoon kosher salt
- ½ teaspoon ground black pepper
- ⅓ cup, halved and pitted Kalamata olives
- 2 teaspoons grated lemon zest
- ¼ cup shaved Parmesan cheese
Bring a medium saucepan filled with 6-cups of water to a boil over high heat. Once boiling, add the broccoli florets to the water and cook for 3-4 minutes. Remove from the water, drain well and toss with the olive oil, salt and pepper.
Set the Air Fryer to 400 degrees Fahrenheit and place the broccoli in the basket of the Air Fryer. Close the drawer of the Air Fryer and set the timer to 15 minutes. Cook the broccoli, tossing halfway through the cooking process to ensure even browning.
Once the timer goes off, remove the drawer of the Air Fryer and transfer the broccoli to a serving bowl. Toss with the olives, lemon zest and Parmesan cheese and serve immediately.
