The Catfish Place's Hush Puppies

Recently featured on Emeril's Florida: Kissimmee, although The Catfish Place is actually located in neighboring central St. Cloud, Florida. The Catfish Place is one of St. Cloud's favorite places to dine and these hush puppies are no laughing matter!

  • Prep Time: 10 minutes
  • Total Time: 30 minutes
  • Yield: Recipe makes about 30 hush puppies.


  • Oil for frying (vegetable, canola, etc)
  • 1/4 cup sugar
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/2 teaspoon garlic salt
  • 2/3 cup chopped onion
  • 1 egg beaten
  • 1 1/4 cup milk
  • 1 1/2 cup yellow cornmeal
  • 1 1/2 cup flour


  • Heat oil in deep fryer or skillet to 350 degrees.

  • Mix sugar, baking powder, salt, pepper, and garlic salt in a medium bowl.

  • In a blender, blend onion, egg, and milk until they are a milkshake consistency.

  • Whisk the blended mixture into the dry spice mixture. Let sit until bubbles begin to form - about five minutes.

  • Combine cornmeal and flour in a small bowl. Gradually whisk in wet mixture. Batter should be thick like cookie dough.

  • Using a 1 1/2 tablespoon scoop, drop dollops of batter in the hot oil. Fry until they are golden brown, about 4-5 minutes.

  • Remove hush puppies and drain on paper towels.
