- 2 cups chopped Vidalia onions
- 1 cup diced pears (unpeeled)
- 1/2 cup chopped pimentos
- 1 tablespoon chopped jalapeno peppers
- 2 tablespoons chopped fresh cilantro
- 2 tablespoons fresh lime juice
- 1 teaspoon salt
- In a medium bowl, combine the onions, pears, pimentos, jalapeno peppers, cilantro, lime juice and salt. Serve immediately, or cover and refrigerate for up to 2 days. Serve with seafood, chicken or hamburgers.
