- 2 egg whites
- Three-fourths cup sugar
- 3/4 cup semisweet chocolate chips
- 3/4 cup finely chopped pecans
- 1 teaspoon pure vanilla extract
- One-eighth teaspoon salt
Preheat the oven to 350 degrees. Lightly spray 2 cookie sheets with non-stick spray or line with parchment paper. In a large bowl, beat the egg whites until they begin to stiffen. Blend in the sugar and beat until stiff peaks form. Stir in the chocolate chips, pecans, vanilla, and salt. Drop the mixture by teaspoonfuls onto the cookie sheet (a small scoop works well for this). Place the cookie sheet in the oven and turn off the oven. Leave overnight or until the oven cools. Gently remove the meringues with a wide knife or spatula.
