Chipotle Dressing

  • Yield: About 1 cup


  • 1.5 oz chipotle chilies in adobo sauce
  • 1 limeís juice
  • 1 ancho chili, seeded and minced
  • 1 teaspoon garlic
  • 1 teaspoon sugar
  • 1 cup olive oil
  • Salt and freshly ground black pepper


  • Combine chipotle chilies, lime juice, ancho chili, garlic and sugar in a bowl. Using a pestle mash the ingredients until they form a paste. Then whisk in olive oil very gradually until emulsified. Season with salt and freshly ground black pepper to taste.
