Tortilla Chips

  • Yield: 80 chips


  • Ten 6-inch corn tortillas
  • 4 cups vegetable oil
  • 1/2 teaspoon salt


  • Cut each tortilla into 8 triangles.
  • In a large, heavy, deep pot or an electric deep-fryer, heat the vegetable oil to 360°F. Deep-fry the tortilla chips, in batches, until lightly golden and crispy, 3 to 4 minutes. Drain on paper towels and season with the salt. Eat immediately!
