Succotash

Ingredients

  • 2 tablespoons unsalted butter
  • 1 tablespoon vegetable oil
  • 1/2 cup chopped onion
  • 1/4 cup chopped red bell pepper
  • 1 teaspoon minced garlic
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 1 pound fresh or frozen baby lima beans
  • 1 1/2 cups low-sodium chicken broth
  • 1 teaspoon chili paste
  • 2 cups fresh or frozen corn
  • 2 teaspoons chopped fresh parsley leaves

Directions

  • Melt butter and oil in a 3-quart pot set over medium heat. Add onion, bell pepper, garlic, salt, and black pepper and cook until onions are soft, about 5 minutes. Stir in lima beans, chicken broth, and chile paste, and bring to a simmer. Cover and cook for 20 minutes, or until beans are tender. Stir in corn and cook for 3 minutes longer. Remove from heat, stir in parsley, and serve hot.
