Roasted Shallot Sauce

  • Yield: About 1 1/4 cups

Ingredients

  • 16 roasted shallots
  • 8 roasted garlic cloves
  • 1/2 teaspoon salt
  • 4 turns freshly ground black pepper
  • 1/2 cup port or dry red wine mixed with 1 tablespoon sugar
  • 2 cups Veal or Beef Stock or [2]
  • Brown Chicken Stock [3]

Directions

  • Combine the shallots, garlic, salt, pepper, and port in a small nonreactive saucepan over high heat. Bring to a boil and cook for 5 minutes.
  • Stir in the stock and cook over high heat for 10 minutes. Reduce the heat to medium and cook for 20 to 25 minutes.
