Mashed Potatoes

Ingredients

  • 4 large Idaho potatoes, peeled and cubed
  • 1/2 teaspoon salt
  • 1/4 cup (1/2 stick) unsalted butter, cut into pieces
  • 1 cup milk
  • 1/8 teaspoon freshly ground white pepper

Directions

  • Put the potatoes in a large saucepan and cover with water. Add 1/4 teaspoon of the salt and bring to a boil. Reduce the heat to medium and cook, covered, until tender, 15 to 20 minutes. Drain, then return the potatoes to the pot. Add the butter and stir and mash until it melts completely. Add the milk, the remaining salt, and the white pepper and stir to mix. Serve hot.
