Gingered Nuoc Mam

  • Yield: 2/3 cup


  • One 2-inch piece of fresh ginger, peeled and finely minced
  • 1/3 cup freshly squeezed lime juice, or to taste
  • 2 ½ tablespoons sugar, or to taste
  • 2 ½ tablespoons Vietnamese fish sauce, or to taste
  • Pinch of crushed red pepper


  • Combine the ginger, lime juice, and sugar in a nonreactive bowl and stir until the sugar has dissolved. Add the fish sauce and crushed red pepper, taste, and adjust the seasoning by adding more sugar, lime juice, or fish sauce, to taste. 

    Set aside for the flavors to come together, at least 30 minutes.
