Arugula Pesto

  • 2 cups baby arugula
  • 1/2 cup grated parmesan cheese
  • 1/2 cup toasted walnuts, roughly chopped
  • 1 tablespoon minced garlic
  • 1 cup olive oil
  • salt and pepper to taste


  • In a food processor, combine the arugula, parmesan, walnuts, and garlic and pulse to blend. With the machine running, pour the olive oil through the food tube in a slow, steady stream and process until smooth, stopping to scrape down the sides of the bowl as needed. Taste and adjust the seasonings.
