Chocolate Mint And Raspberry Tisane

  • Yield: 8 glasses


  • 1 pint raspberries
  • 7 or 8 sprigs chocolate mint
  • 1 1/2 cups water
  • 1/4 cup honey
  • 1 large bottle soda water or sparkling water


  • In a saucepan, combine raspberries, 3 sprigs chocolate mint, water and honey and bring to a boil over medium high-heat. With the back of a spoon mash the raspberries against the side of the saucepan to release the juice. Reduce heat and simmer 5 minutes. Strain the mixture into a bowl and cool. Add about 1/4 cup raspberry mixture to each of 8 tall glasses filled with crushed ice. Add sparkling water to fill, stir, garnish with a few leaves or a small sprig of mint and serve.
