Roasted Sweet Potatoes

  • Yield: 4 side servings


  • 4 medium sweet potatoes, scrubbed
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 2 turns freshly ground black pepper


  • Preheat the oven to 400ºF. Line a baking sheet with parchment of wax paper.
  • Rub the potato skins with the oil and sprinkle with salt and pepper. Place the potatoes on the baking sheet and roast until fork-tender, for 45 to 50 minutes. Remove from the oven, split them, and serve warm.
