Fish Fry


  • 2 pounds self-rising flour
  • 1 pound white corn meal
  • 1 pound fine yellow corn flour
  • 8 tablespoons cayenne
  • 11 tablespoons garlic powder
  • 11 tablespoons black pepper
  • 5 tablespoons onion powder
  • 2 tablespoons white pepper
  • 1 pint yellow mustard
  • 1 pint buttermilk
  • 1 tablespoon Cajun seasoning (Or combine 1 tablespoon each of cayenne, garlic powder and black pepper)


  • Mix the meal ingredients in a bowl. Make the batter in another bowl. Dip the fish fillets in the batter then roll it in the meal mixture twice.
  • Fry in oil heated to 360 degrees until golden brown. Drain on brown paper bag or paper towels.
