Grandmother's Shortcake

  • 2 cups sifted flour
  • 4 teaspoons baking powder
  • 3/4 teaspoon salt
  • 1/3 cup sugar
  • 1/2 cup heavy cream
  • 1/4 cup water
  • 1/2 cup vegetable shortening


  • Preheat the oven to 450 degrees F or preheat the Emeril Lagasse Air Fryer 360 to 425 degrees F.

  • Combine and sift the flour, baking powder, salt, and sugar. Mix the cream with the water. Cut the shortening into flour mixture, then quickly stir in the liquid mixture.

    Transfer the dough to a lightly floured work surface and gently pat it into a square roughly 9 to10 inches square and about 3/4 inch thick. Cut the dough into 9 equal portions. Bake on ungreased baking sheet until lightly golden, about 15 minutes. Remove from the oven and cool slightly before serving.
