Red Bean Relish

  • Yield: About 2 cups


  • 2 tablespoons olive oil
  • 1/4 cup diced andouille sausage
  • 1/4 cup chopped green onions
  • 1/4 cup chopped celery
  • 2 tablespoons minced red bell peppers
  • 2 tablespoons peeled chopped tomatoes
  • 2 teaspoons minced garlic
  • 1 teaspoon Creole Seasoning
  • 1 cup cooked red kidney beans
  • Salt and black pepper


  • Heat oil in a medium skillet over medium-high heat. When oil is hot, add sausage, green onions, celery, bell peppers, tomatoes, garlic and Creole seasoning; sauté 2 minutes. Stir in beans, salt, and 3 turns of pepper; sauté 1 minute more.
