Herb And Sausage Orzo


  • 2 tablespoons olive oil
  • 1/2 cup finely chopped onion
  • 1 tablespoon finely chopped garlic
  • 1 cup orzo pasta (1/2 pound)
  • 1 teaspoon salt
  • Black pepper
  • 1/4 cup assorted chopped fresh herbs (such as basil, parsley, and thyme)
  • 3 1/2 cups chicken stock
  • 1/4 cup chopped smoked sausage
  • 1 tablespoon unsalted butter, softened


  • Heat oil in a saucepan and add onions, garlic, orzo, salt and pepper. Cook, stirring constantly, 2 minutes. Stir in herbs and stock and bring to a boil. Reduce heat and cook, stirring occasionally, about 20 minutes. Remove pan from heat and stir in sausage and butter.
