Semolina Pudding

Instructions

Preheat oven to 400 degrees. Bring milk, sugar, salt and vanilla bean to a boil. Using a whisk, mix in the semolina and butter. Pour into a 1 1/2 quart baking dish. Cover and bake for 40 minutes. Garnish with the berries, cream, and mint.

Yield: 6 servings

Ingredients

  • 4 1/2 cups milk
  • 1 cup sugar
  • Pinch of salt
  • 1 vanilla bean, split
  • 1 1/2 cups semolina
  • 4 ounces unsalted butter
  • 1 pint of raspberries
  • 1 cup sweetened whipped cream
  • 6 sprigs of mint
