In a glass container, combine all the ingredients together. Allow the peaches to marinate overnight. Using a fork, slightly mash 1/4 of the peaches against the side of the dish. Lay the pieces of angel food cake in a shallow bowl. Place the ice cream in the center of the cake. Spoon the peaches over the ice cream. Garnish with mint and powdered sugar.
