Papaya Salad

Ingredients

  • 2 cloves garlic
  • 1 or 2 dried hot chiles
  • 1 fresh Thai chile
  • 1 green unripe papaya, thinly shredded lengthwise
  • 1 tablespoon palm sugar or light brown sugar
  • 1 lime, juiced
  • 1 tablespoon fish sauce, or more to taste
  • 6 cherry tomatoes, halved

Directions

  • In a large mortar and pestle, crush garlic and both types of chiles to a coarse paste. Add papaya, sugar, and lime juice and continue to stir with the pestle and a spoon to blend. Add the fish sauce and cherry tomatoes and combine. Check seasoning and adjust, if necessary. The success of this salad depends on the balance of flavors in the dressing; add lime juice, sugar, and fish sauce to achieve the right balance of salty, sour, sweet and spicy to suit your taste.
