New New Creole Pork Chops With White Beans

  • Yield: 4 main-course servings
[1]

Ingredients

  • 2 1/2 cups Creole White Beans [2]
  • 4 large pork loin chops, trimmed (about 8 ounces each and 2 inches thick)
  • 4 teaspoons Emeril's Creole Seasoning [3]
  • 1 tablespoon olive oil

Directions

  • Prepare the Creole White Beans, and cover to keep warm.
  • Sprinkle the chops with the Creole Seasoning, using 1/2 teaspoon per side, and with your hands coat the meat.
  • Heat the oil in a large skillet over high heat. Add the chops and sautÈ them for 7 minutes on each side; stand them on their fat edge and cook for another 4 minutes. The pork will be very dark on the outside, pink and juicy on the inside.
  • To serve, spread a heaping 1/2 cup of the Creole White Beans on each of 4 plates and top with a pork chop.
