Mixed Berry Cobbler

Ingredients

  • 1 cup sugar
  • 1 tablespoon cornstarch
  • 1 cup raspberries
  • 1 cup strawberries
  • 1 cup water
  • 8 to 10 pats butter
  • Ground cinnamon
  • One recipe of your favorite biscuit dough (or 6 to 8 refrigerated biscuits cut into quarters)
  • Almond-flavored whipped cream

Directions

  • (Just about any combination of fruit will work for this recipe.)
  • Preheat the oven to 400 degrees. Spray a 13 x 9-inch baking dish with non-stick spray. Sift the cornstarch and sugar together in a bowl. Combine the fruit, water, sugar, and cornstarch in a heavy saucepan. Boil until the mixture thickens, about one minute. Pour the mixture into baking dish, dot with butter, and sprinkle with cinnamon. Drop your favorite biscuit dough by spoonfuls (or individual quarters of refrigerated biscuits) onto the fruit mixture. Bake until lightly brown, about 25 minutes. Serve with the whipped cream.
