  • Ramps are simply wild onions that grow in the Eastern United States and Canada. Though they look like a scallion and some folks know them as wild leeks, ramps definitely have their own flavor, which is strong and garlicky and oniony all at the same time. Ramps are usually found for only a short time in gourmet markets in spring. When choosing ramps, use common sense and choose ones that are fresh looking with a bright green color. They can be stored in plastic wrap or bags in the refrigerator for up to one week. Though the flavor of a ramp is stronger than either a leek, onion or scallion, it could be substituted for any of these and is even very tasty raw in salads. Towns lucky enough to have native ramps growing wild often celebrate its arrival every spring with festivals and parties held in its honor.
