Black Bean Sauce

  • Yield: 2 cups

Ingredients

  • 1 tablespoon olive oil
  • 1/3 cup chopped onions
  • 1 tablespoon minced garlic
  • 1 tablespoon seeded, chopped jalapeno
  • 1 cup black beans, soaked in water to cover, at least 8 hours or overnight
  • 6 cups chicken stock
  • 1 tablespoon lime juice
  • 1 teaspoon Southwest Seasoning , or to taste
  • 1 teaspoon chili powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon salt
  • Black pepper
  • 1/4 cup coarsely chopped cilantro

Directions

  • Heat oil in a large skillet over high heat. Add onions, garlic, jalapeno and drained, rinsed beans; cook, stirring, 2 minutes. Add stock, lime juice, Southwest seasoning, chili powder, cumin, salt and 3 turns of black pepper. Bring to a boil and simmer 30 minutes. Reduce heat to medium and simmer 15 minutes. Stir in cilantro and simmer until beans are tender, about 5 minutes longer.
