Roasted Red Pepper Mayo

Instructions

Combine all the ingredients in the bowl of a food processor,
and process for 30 seconds. Scrape down the sides of the bowl with a rubber spatula, and process for 30 seconds longer. Store in an airtight container in the refrigerator for up to 1 week.

Yield: 1 1⁄2 cups

Ingredients

  • 1⁄2 cup diced roasted red pepper (from about 3⁄4 cup packed jarred roasted red pepper)
  • 3⁄4 cup mayonnaise
  • 1 tablespoon minced garlic
  • 1⁄4 teaspoon salt
  • 1⁄8 teaspoon cayenne pepper
