Combine all ingredients, plus 2 tablespoons water, in a bowl and whisk to combine. Set aside until ready to serve.

- 1 tablespoon Sriracha sauce
- 1/4 cup freshly squeezed lime juice
- 1/4 cup sugar
- 1/4 cup finely grated carrot
- 2 tablespoons chopped fresh cilantro leaves
- 1 tablespoon chopped fresh mint leaves
- 1 Thai bird chile, thinly sliced, or 1/2 teaspoon crushed red pepper (optional)
