Green Salad with French Dressing

Instructions

For the Dressing:
Whisk together the vinegar, lemon juice, Dijon mustard and paprika until well blended. Slowly whisk in olive oil until emulsified.

For the Salad:
In a large wooden salad bowl, combine the mixed greens, sliced red onion and tomato wedges. Drizzle with French Dressing and toss to coat. Top with croutons and serve.

Yield: 6 servings

  • 2 tablespoons red wine vinegar
  • 2 tablespoons lemon juice
  • 1 teaspoon Dijon mustard
  • 1 teaspoon paprika
  • 1/2 cup olive oil
  • 1 head mixed green salad
  • 1 small red onion, sliced
  • 1 medium tomato, wedged
  • 1 cup croutons, for garnish
