Nuoc Cham Sauce
Instructions
Combine the garlic, chile and sugar in a mortar and pound with a pestle to a fine paste. Add the lime juice, vinegar, fish sauce and water and stir to blend. Stir in the carrot and serve immediately or refrigerate, covered and in a non-reactive container, for up to 2 days.
Yield: about 1 1/4 cups
Ingredients
- 2 small garlic cloves, minced or crushed
- 1 small fresh red chile pepper, seeded and minced
- 2 1/2 tablespoons sugar
- 2 tablespoons fresh lime juice
- 1/4 cup rice vinegar
- 1/4 cup Nuoc Nam (Vietnamese fish sauce)
- 1/4 cup water
- 1 to 2 tablespoons finely shredded carrot
