Pumpkin Cake
Instructions
Preheat the oven to 350 degrees.
Fold the dry ingredients into liquid until well blended. Pour the mixture into 2 large or 4 small Bunt pans sprayed with non-stick spray. Bake in preheated oven at 350 degrees, 45 minutes for 4 small cakes or 60 minutes for 2 large cakes. Cool. Unmold on plates and sprinkle with powdered sugar before serving.

Ingredients
- MIX TOGETHER:
- 8 ounces egg substitute
- 1 cup brown sugar
- One-half cup sugar
- 1 teaspoon vanilla extract
- 1 cup skim milk
- 1 (28 ounce) can solid pumpkin
- MIX TOGETHER:
- 2 cups all
- purpose flour
- 2 cups oatmeal
- 1 tablespoon baking soda
- 1 teaspoon baking powder
- 3 tablespoons pumpkin pie spice
- 1 cup chopped walnuts
- 1 cup raisins
