Roasted Sweet Potatoes
Instructions
Preheat the oven to 400ºF. Line a baking sheet with parchment of wax paper.
Rub the potato skins with the oil and sprinkle with salt and pepper. Place the potatoes on the baking sheet and roast until fork-tender, for 45 to 50 minutes. Remove from the oven, split them, and serve warm.
Yield: 4 side servings

- 4 medium sweet potatoes, scrubbed
- 2 tablespoons olive oil
- 1/2 teaspoon salt
- 2 turns freshly ground black pepper
