Roasted Shallot Sauce

Instructions

Combine the shallots, garlic, salt, pepper, and port in a small nonreactive saucepan over high heat. Bring to a boil and cook for 5 minutes.

Stir in the stock and cook over high heat for 10 minutes. Reduce the heat to medium and cook for 20 to 25 minutes.

Yield: about 1 1/4 cups
