Fava Bean Relish
Instructions
Heat the oil in a large nonreactive skillet over high heat. Add the andouille and sauté, stirring occasionally, for 2 minutes. Add the beans, onions, tomatoes, garlic, and cilantro, and sauté, stirring and shaking the skillet occasionally, for 2 minutes. Remove from the heat. Season with salt and pepper.
Yield: about 1 2/3 cups
Ingredients
- 1 tablespoon olive oil
- 8 ounces (1 cup) chopped Andouille sausage
- 1/2 cup fresh or frozen (and thawed) fava beans, blanched in salted water for 1 minutes, and peeled
- 1/4 cup chopped onions
- 1/4 cup peeled, seeded, and chopped Italian plum tomatoes
- 1 tablespoon minced garlic
- 1 tablespoon chopped fresh cilantro
- 1/2 teaspoon salt
- 2 turns freshly ground black pepper
