Emeril’s Delmonico: Very old. Very new.

Posted by: Terrance Pitre

Local growers and producers supply many of Delmonico’s fresh ingredients, which Minch uses to create classic dishes, prepared in a modern, lighter style.

When Emeril Lagasse was well on his way to achieving super stardom during his years as Commander’s Palace executive chef, who could have guessed that he would one day own a restaurant founded by a member of the original Commanders family?

Well, it happened in 1997 when Emeril Lagasse purchased Delmonico’s, the restaurant begun more than one hundred years earlier by Anthony Commander. Anthony was the older brother of Emile Commander who established Commander’s Palace in 1880. Read more »

Southern Living Magazine: Three Sides of Emeril

Three Sides of Emeril

The chef with the megawatt smile claims a nationwide empire, but his restaurants started in New Orleans. Come taste where it all began.

By Warner McGowin / Photography Jennifer Davick

Certain icons make New Orleans different. Hot jazz on the street corner. Beignets as light as air, paired with coffee that kicks. Bourbon Street in all its rough-hewn glory. And, of course, Emeril Lagasse.

Twenty-five years after arriving in the Crescent City, the man who practically invented the concept of the celebrity chef is a household name and the head of a culinary empire. Luckily for visitors here, he maintains three restaurants in New Orleans, each with its own identity.

“Three Sides of Emeril” is from the May 2008 issue of Southern Living. Read the full article and watch an audio slide show of Emeril Lagasse on SouthernLiving.com.

EMERIL’S DELMONICO DEBUTS NEW MENU AND SEASONAL FARE FOR FALL

Posted by: Terrance Pitre

Chef Emeril Lagasse updates the menu at his historic restaurant, Emeril’s Delmonico, offering guests fresh tastes for the beginning of the fall dining season. The menu is the first developed under the direction of newly appointed Chef de Cuisine Spencer Minch, a six year veteran of the Delmonico kitchen.

Featured fare includes “Delmonico Charcuterie”, an assortment of Housemade Sausages and Cured Meats with Pickled Vegetables and Champagne Mustard, and Baked Local Oyster Gratinee with Chorizo, Spinach and Béchamel.

Chef Minch notes the menu is inspired by the same Creole traditions that Delmonico pioneered, combining classic southern and old world cuisines with a modern interpretation. German and Alsatian influences are exhibited in the Grilled Niman Ranch Double Cut Pork Chop with Spatzle and Riesling reduction and the “Duo of Lamb” with Garlic-Fennel Lamb Sausage and Ratatouille, Yukon Gold Potato Confit and Natural Jus. Enjoy Sunday Brunch at one of New Orleans’ Legendary Eateries

New Orleans, LA – Emeril Lagasse’s legendary restaurant, Emeril’s Delmonico, will offer a special Easter Brunch seating on Sunday, April 8 from 10:30am-2:00pm. Easter Sunday is the perfect opportunity to re-establish the long standing New Orleans tradition of Sunday Brunch with friends and family, at one of City’s most famed eateries. Emeril’s Delmonico marks Easter Sunday with the first Sunday Brunch since the institution reopened last October, and is the perfect culinary celebration to indulge after egg hunts and early morning services.

The menu at Delmonico will feature fresh takes on brunch favorites starting with appetizer selections of Duck Confit & Wild Mushroom Strudel and Emeril’s New Orleans Style Barbecued Shrimp with Baked Grits, alongside entrees such as Foie Gras Waffle with Cognac-Maple Syrup, and Pecan Butter and Fried Oyster & Avocado Panini with Tomato Jam. The menu also features Delmonico’s namesake dry-aged prime beef selections including New York Strip, Filet and Bone-in Rib Eye.

Delmonico, an icon in the New Orleans restaurant industry, has been in business since 1895. In 1997, Chef Emeril Lagasse became the owner of the two-story Garden District building and began an extensive historic renovation, honoring the heritage of the building, and embracing the restaurant’s history. Emeril’s Delmonico is located in a two-story structure located on the edge of the historic Garden District. The building is over one hundred years old and has been described as both Victorian and Edwardian in design. The interior reflects a classic understated elegance with high ceilings, wood floors and large paned windows overlooking St. Charles Avenue.

Emeril’s Potluck
Comfort Food with a Kicked-Up Attitude
by Emeril Lagasse

America’s favorite chef Emeril Lagasse is ready to party.

Parties and celebrations mean food. Lots of food: tureens of soup, platters of chicken, bowls of salad, casseroles of baked pasta. From family reunions to holiday buffets, summer barbecues to tailgate parties, and weekend brunches to bridal showers, Emeril’s Potluck offers crowd-pleasing dishes perfect for gatherings with friends and family.

Emeril’s Potluck brings together everything Emeril loves most about cooking and eating. The food is simple, flavorful, and perfect for sharing at any get-together. Each recipe serves a whopping 8 to 10 people, but don’t assume you’re making too much — everyone will be heading back for seconds and thirds of these Emerilized starters, entrees, drinks, sides, and desserts.

Start by toasting the occasion with a glass of Champagne Punch, a Watermelon Daiquiri, or an Orange Emeril. Then let the feast begin! Classic Blue Cheese Dip, Alain’s Sweet and Spicy Asian Wings, or Sausage-Stuffed Mushrooms will get your party started right! Main courses range from Olive-Stuffed Leg of Lamb and Creole Mustard and Herb-Wrapped Beef Tenderloin to homey favorites such as Charlotte’s Lasagna Bolognese, Penne à la Vodka Casserole, and Tuna Tetrazzini. Of course, it wouldn’t be a party without dessert, so save room for Chocolate Peanut Butter Pie, Strawberry Shortcake, and Emeril’s Tiramisu.

The recipes are quick, easy, and portable. Enjoy these dishes at home or take them on the road. Emeril’s Potluck — so foolproof, so easy, so crowd pleasing that luck has nothing to do with it.

The Times-Picayune’s Top Restaurant Picks

The Times-Picayune’s Top Restaurant Picks

The new classics
Seriously great food
Sunday, October 24, 2004
By Brett Anderson
Restaurant critic

In 1997, when he officially took over Delmonico, which first opened in 1895, Emeril was essentially trying to do what the Brennans did when they acquired Commander’s Palace (est. 1880) in 1974: preserve an important New Orleans restaurant by restoring the luster it once had. Delmonico is arguably the most grandiose of all New Orleans restaurants, a bi-level sanctuary of old world elegance and canonical dishes abetted by such modern amenities as heirloom beans, rib-eyes dry-aged on the premises, burrata mozzarella you can eat with a spoon, pork from pure-bred Berkshire pigs, well-traveled sommeliers. If this is really how things used to be, here’s hoping more restaurants today can become like they were back then.
