Table 10 puts a new twist on Emeril’s legacy with creativity and solid cooking

Table 10 was named after a small table at Emeril Lagasse’s very first restaurant in New Orleans. It was at this table where early morning and late-night meetings were held, menus were created, and the foundations of an American culinary dynasty were formed. The name Table 10 encapsulates that excitement, and when this restaurant debuted with The Palazzo’s opening in 2008, it captured that spirit along with the big, bold flavors identified with this celebrity chef extraordinaire.

But there is much more to the man than just his “Bam!” Lagasse demonstrates flexibility with an amazing revamped menu at Table 10, anchored by farm-fresh ingredients and an eclectic mix of light, refreshing salads and hearty, satisfying entrées. Is this a kinder, friendlier Emeril? Well, he’s already pretty friendly. This is an impressive step in a modern direction, showing a bit of restraint at the right times and letting loose with that “Bam!” when it’s needed.

Viva la bam! Emeril’s Table 10 lightens its menu up

A daily chalkboard announces where the produce comes from: Roe gets his carrots from Gilcrease Orchard north of town, and the regular menu features tomatoes and cucumbers from Pahrump. None of this would mean anything alongside a steak, gravy and grits menu, but Emeril’s Table 10 2.0 has a thing for salads and other light fare that would have gotten him laughed out of New Orleans 15 years ago. In place of butter-roasted shrimp on mashed potatoes with cheese in a béchamel cream sauce, here you should start with house made grissini (bread sticks) wrapped with paper thin slices of La Quercia hog prosciutto. Then get the radishes. Spread them with butter and sea salt, take a bite, and discover an odd but delightful, bitter-rich match in your mouth. Those needing an artery-hardening fix will have no complaints with the roasted marrow bones, and little-fish fans will find themselves fawning over the Great Lakes fried smelts. The small snack assortment adds up to one of the tastiest and more interesting in town.

Also at the Palazzo, Emeril Lagasse’s Table 10 has just released its spring cocktail menu of 13 new drinks created by mixologist Max Solano, including the new signature cocktail, Hang “10,” which features Smirnoff Strawberry vodka, strawberry marmalade, POM pomegranate juice, fresh lime juice and brut sparkling wine for $15. Three award-winning cocktails also make their debuts, including the Genevrier Verte, South Beach Sling and Eau de Perfection.

Gastro pubs contain all the beer and good times you could want with a bar combined with high-end dining. The combination of these two concepts started in London but has made its way to Las Vegas to bring you find collections of beer to swig while you’re noshing on good eats. Here’s a look at the top five gastro pubs in Sin City.

Bam. Combine your love of drinking with good New Orleans cooking and even a bet or 10 on the game and you get Lagasse’s Stadium at the Palazzo. Try the Emeril’s Steak BAM’wich, a grilled prime 8-ounce sirloin on homemade herb Focaccia dressed with blue cheese slaw, balsamic-braised red onions and Emeril’s own steak sauce served with truffle parmesan potato wedges. You can start with dishes such as the grilled chicken or barbecue pork nachos or the Italian sausage arancini, crispy fried Italian sausage and mozzarella risotto balls with tomato basil dipping sauce. Then nibble on Lagasse favorites such as the Creole shrimp salad sandwich or the Creole rueben. More than 100 HDTVs surround the joint, along with sports betting stations, blackjack and craps tables, video poker machines, billiard tables and video arcade games.

And now — as the high season of the sports bar segues from wild-card frenzy past the Super Bowl and romps through March Madness to baseball’s March 31 opening day — a whole new universe awaits the nation’s worshipers of sports and electromagnetic radiation.

The food is from-scratch, fresh and even locavore. Behold, then, the Springer Mountain free-range chicken from north Georgia proudly referenced on the menu of Dantanna’s Surf and Turf in the Buckhead neighborhood of Atlanta — along with Creekstone and Allen Brothers beef and Niman Ranch pork. Note the butternut squash bisque at the Hype Lounge, and that roasted brussels sprouts side at the Ainsworth, both in Manhattan. Then meditate on Emeril Lagasse’s steak BAM’Wich at his Lagasse’s Stadium in Las Vegas: grilled sirloin on herb focaccia dressed with blue-cheese slaw and balsamic-braised onions, served with truffle-Parmesan steak fries.

1. Lagasse’s Stadium- If you are going to Vegas, you need to do things up BIG! Lagasse’s Stadium in The Palazzo does just that. Owned by larger than life chef, Emeril Lagasse, this place is goes overboard with everything. Emeril gives the sportsbook a gourmet makeover here, offering theatre style seating, over one hundred plasma HDTV’s, and a 10×20 foot projection wall. For big spenders, try one of the sky boxes overlooking the stadium.

The food is excellent as you might expect. Some of our favorites were the nachos, buffalo wings, and pulled pork sandwhich.
