  • Yield: 1 cup


  • 1 cup imported black olives
  • 8 anchovy fillets
  • 1/4 cup capers
  • 1 1/2 tablespoons minced garlic
  • 1/2 cup olive oil
  • Fresh ground black pepper


  • In a food processor with a metal blade, combine all the ingredients together, except for the oil. Pulse a couple of times to incorporate. With the machine running, slowly add the oil to form a paste. Season with black pepper.
