The Catfish Place's Hush Puppies

Recently featured on Emeril's Florida: Kissimmee.

Ingredients

  • Oil for frying (vegetable, canola, etc)
  • 1/4 cup sugar
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/2 teaspoon garlic salt
  • 2/3 cup chopped onion
  • 1 egg beaten
  • 1 1/4 cup milk
  • 1 1/2 cup yellow cornmeal
  • 1 1/2 cup flour

Instructions

Heat oil in deep fryer or skillet to 375 degrees.

Mix sugar, baking powder, salt, pepper, and garlic salt in a medium bowl.

In a blender, blend onion, egg, and milk until they are a milkshake consistency.

Whisk the blended mixture into the dry spice mixture. Let sit until bubbles begin to form - about five minutes.

Combine cornmeal and flour in a small bowl. Gradually whisk in wet mixture. Batter should be thick like cookie dough.

Using a teaspoon, drop dollops of batter in the hot oil. Fry until they are golden brown, about 4-5 minutes.

Remove hush puppies and drain on paper towels.

Yield: Recipe makes about 30 hush puppies.
