Avocado, Tomato, and Red Onion Salad

Ingredients

  • 2 Hass avocados, peeled, pitted, and sliced
  • 1 pound Roma tomatoes, quartered
  • 1/2 cup thinly sliced red onion or shallot
  • 1/2 cup flat-leaf parsley leaves
  • Salt and freshly ground black pepper, to taste
  • 3 tablespoons extra-virgin olive oil
  • 1 tablespoon freshly squeezed lime juice
  • 6 to 8 ounces blue cheese, crumbled

Instructions

Serves 6

Arrange avocados on a platter and season with salt and pepper. In a small bowl, combine tomatoes, onion, and parsley; season with more salt and pepper and arrange over avocados. Drizzle olive oil and lime juice over top, add blue cheese, and serve immediately.
