Pesto Plenty

Ingredients

2 cups fresh basil leaves
One-fourth cup pine nuts
One-fourth cup peeled garlic cloves
2 tablespoons fresh parsley
One-fourth cup grated Parmesan cheese
One-third cup grated Pecorino Romano cheese
2 tablespoons (or more) olive oil
Salt

Instructions

Place all ingredients in a food processor and process to a smooth paste. Adjust seasoning with salt. Toss with warm pasta and serve as a side dish to fish or poultry.
