Dijon Vinaigrette

Ingredients

  • 2/3 cup extra-virgin olive oil
  • 2 tablespoons Dijon mustard
  • 1/3 cup Champagne
  • 1 teaspoon fresh lemon juice
  • 1/4 teaspoon minced fresh thyme

Instructions

Whisk the oil into the mustard. Add the champagne, lemon juice and thyme, whisking until smooth.

Makes enough for 4 salads
