Vodka Vinaigrette

Ingredients

2 tablespoons minced shallots
1 teaspoon minced garlic
1/2 teaspoon salt
3 turns freshly ground black pepper
1/4 cup balsamic vinegar
3 tablespoons vodka
2/3 cup olive oil

Instructions

Combine all of the ingredients in a small bowl and whisk until blended. Serve immediately or store, refrigerated, in an airtight container for up to 2 days. Whisk before serving.

Yield: 1 1/4 cup
