Mama Simmons' Buttermilk Biscuits
Instructions
Preheat the oven to 425 degrees. Grease a baking pan with shortening.
Sift the flour, baking soda, and salt into a bowl. Add the shortening and cut into the mixture until small pea-sized balls form. Add the buttermilk and stir until the mixture forms a soft dough. Turn the dough onto a lightly floured board and knead several times. Roll out dough and cut biscuits with a one and one-half-inch diameter biscuit cutter. Place biscuits in the prepared pan, with the biscuits touching, and brush tops with melted shortening. Bake 10 to 12 minutes and serve immediately.

- One and one-half cups all-purpose flour
- One-fourth teaspoon baking soda
- One-fourth teaspoon salt
- 4 tablespoons vegetable shortening
- Two-thirds cup buttermilk
