Fried Plantains

Instructions

Peel the plantains and slice them diagonally into 1/2-inch slices.
 
Heat the oil in a large pot until very hot (about 375ºF). Fry the plantains in 2 batches until brown and crisp, for about 3 to 4 minutes. Drain them on paper towels.
 
In a small bowl combine the sugar with the cinnamon, and blend thoroughly. Roll the fried plantain slices in the mixture and serve immediately with ice cream.
 
Yield: 4 servings to top ice cream

  • 2 ripe plantains
  • 6 cups vegetable oil
  • 1 tablespoon sugar
  • 1 teaspoon cinnamon
