Prick the sweet potatoes several times with a fork and roast at 350 degrees for 45 minutes or until tender. Remove the potatoes from the oven and cool slightly. As soon as you are able, using a potholder or kitchen towel, peel the potatoes and transfer the pulp to a food processor. Process until smooth. Add the butter, sugar, cream and bourbon. Process to blend. Season to taste. If you wish, shape the sweet potatoes into quenelles before serving. Garnish with chives.
