Analytical Data on Emeril’s Bayou Blast Essence

Post Author: Terrance Pitre

By Marcelle Bienvenu

Dr. Gerald DeMenna, who runs a small research laboratory in New Jersey, was curious enough about the four “Essences of Emeril” to take the time to do a research paper on them.

He tells us that he’s been doing kitchen chemistry for years, and finds that the research “gets people tuned in.”

The Dore Barbecue

Post Author: Terrance Pitre

By Susan Doré

Sundays and holidays in my neighborhood are easily identified but not necessarily by a glance at the calendar or by the pealing of St. Mary Magdalene’s bells calling the faithful to Mass. No, long-time residents of this old neighborhood, where people sit outside and keep their windows open in nice weather, instinctively recognize the importance of the day by the scent of “Dore’s barbecue” permeating the air.

Crawfish Diplomacy

Post Author: Terrance Pitre

By Mary Tutwiler

Global environmental sustainability starts with the ecrevisse.

Soaring gasoline prices. Killer hurricanes. Ninety-two in the shade in April. These are all consequences of global warming, but are they enough of a wake-up to make Cajuns change their ways and live more environmentally sustainable lives? I doubt it.

Pat’s Nutrition Feature

Post Author: Terrance Pitre

By Patrick Mould

As we move forward into the new millennium one of my goals is to eat healthier.

When I started in foodservice twenty years ago I weighed 174 pounds, had a waist size of 32 and was a lean-mean-cooking machine. Unfortunately those days are long gone. Queen For A Day, Louisiana Style

Post Author: Terrance Pitre

By Susan Doré

It seems to me that Mother’s Day is one of those over-rated holidays. Thanks to the greeting card and floral industries, many of us have grown up thinking we are somehow derelict in our filial duties if we do not “do something” for our mothers on their day of days. The Big Smoke

Post Author: Terrance Pitre

By Patrick Mould

We men must do MANLY things. Why, because we’re MEN that’s why!

And perhaps the most manly of manly things to do is smoke cigars. So when I was given the assignment of attending the Big Smoke, which took place in April at the New Orleans Marriott, I couldn’t wait to see how it would unfold!

Derby Day Traditions

Post Author: Terrance Pitre

By Susan Doré

On the first Saturday of May, the Bluegrass Country capital of Lexington, Kentucky annually hosts the Kentucky Derby, one of America’s greatest parties. The Derby is the oldest consecutively held thoroughbred race in the United States, and its traditions date from 1875 when a crowd estimated at 10,000 converged on the Lexington Jockey Club grounds to watch a field of 15 three-year-olds race to the finish line.

Horseracing is a pretty big deal down here in South Louisiana‚Ķfrom fancy big city tracks and thoroughbreds to country dirt tracks and quarter horses. And we do drink mint juleps as we cheer our favorites along‚Ķwe just do it “Louisiana style!”
