Bustelo? Cool…

Post Author: Jenny McCoy

Bustelo Cool

Café Bustelo and I go way back. As a child, my best friend’s mother, Reina (born and raised in Cuba), used to make Ali and I café con leche for breakfast, served alongside buttered saltines. So when I came across “Bustelo Cool,” a canned café con leche—espresso, milk and a bit of sugar. I had to give it a try.

It’s quite tasty and makes for a nice coffee on the go (especially when you don’t have time to wait in line at your local coffeeshop). However, it doesn’t quite replace my childhood Sunday morning breakfasts…

I like to wrap the outside edges of them in bacon using a couple of toothpicks to hold it in place. Then just grill them until they are done. It the bacon is partiallly cooked prior to wrapping them it works out really well. It may take a few attempts to get the timing down but when it comes together bothe the Scallops and Bacon will be a nice treat. The Scallops without the bacon are still great even if the bacon is too under-cooked to serve when they are done.

Serve a small steak and some steamed veggies as an addition and there is a complete meal right there.

I’m trying to learn how to make an easy yet tradition Southern Style meal. This would be the first time I will be attempting to make a Southern dinner. If anyone can help me with some great recipes. It’s a surprise for someone who is from the South and hasn’t had a home southern meal in a long time. Thanks!!!
