An intimate Sunday night dinner party is just the ticket during the cold, winter months. Consider a simple menu—a salad made with apples, roasted Cornish hens, and rather than dessert—a cheese course. Satisfying? You bet!

The original Waldorf salad was created at the Waldorf - Astoria Hotel in New York in the 1890s. Here we have Emeril’s version, which is a combination of apples, blue cheese, red grapes, and walnuts, along with other ingredients that makes this a delicious salad to serve with the Cornish hens.
